
Chef Fortino Solano, native of Oaxaca, Mexico, State known for its gastronomy richness and world famous for its cultural celebration of “La Guelaguetza”, held every year in the “Fortin” hill.
“I grew up surrounded by the wonders of the field, helping out my grandfather, a farmer dedicated to his home-grown produce in the fertile land of Oaxaca, and browsing in the kitchen while my mother and my grandmother were cooking the very elaborate and traditional Oaxaca’s cuisine. I’m sure that these customs deeply rooted in my culture, have strongly influenced my passion for the art of cooking and my ability to mix the produce, herbs and ingredients that are so familiar to me.” – Chef Fortino

In September 2006, he opened his own establishment with the idea of creating a cutting-edge restaurant as prestigious as those in New York, Chicago, Los Angeles and worldwide.
